For those who use Markdown regularly (other than for writing questions and answers on StackExchange), what workflows do you use when working with Markdown-formatted text files, and why? What tools/applications do you use, for what purpose(s), and why do you like them?

I'm interested in Mac-, Windows-, and Linux-based answers, and even hybrid workflows (e.g. a PC with an iPad or iPhone).

Both Emacs and Vim have excellent markdown modes, Emacs Markdown mode and Markdown Vim mode respectively. For processing I prefer Pandoc since it's cross-platform and has a lot of different output formats. If the 'task' requires more than one file I automate the generation process using Rake.

You can also use a hack to make Org-mode use Markdown-style hash-sign headings to enable Org-mode features. Unfortunately Org-mode doesn't support export to Markdown yet.

Pandoc is good tool. But for editing I use Gonzo. It's a Adobe Air software, so you can use it on MAC, Windows, Linux. I'm not sure it runs on iOS or Android. It has shortcuts and spell checking, split pre-view. For writing longer SE Q&A's, Wikipedia articles etc it's perfect and Pandoc gives you option to transform into many formats.
