Sounds like a terrible instructor. If you're learning the material as you go along, you should be forming an understanding of the concepts. By knowing this, you can better insert the details to support the concepts. If you can't do this, I'm not sure how else you would accomplish this other than rote memorization - use flash cards?

Why not use a note-taking app on the device? You can export the plain text to something like excel and represent it graphically from there.

Why not just use a calendar? X amount of sections divided by Y number of weeks, put a deadline for each on a specific day and leave yourself some refresh time.
